According to a report by Indian Express Gujarati, whether it is the mild chill of winter or the celebration of a festival, a glass of hot or cold masala milk is considered excellent for both health and taste. The inclusion of nutritious dry fruits such as cashews, almonds, and pistachios, along with poppy seeds and charmaguz seeds, combined with the powder of whole spices like cinnamon, cardamom, pepper, and cloves, provides it with a distinct aroma and flavour. Prepared with the royal colour of saffron, this drink helps in keeping the body energetic and the mind refreshed.
To prepare this masala milk, first take 10 pieces of almonds, 8 pieces of cashews, 8 pieces of pistachios, 10 grams of watermelon seeds, and 10 grams of poppy seeds in a mixer jar. Coarsely grind these ingredients into a powder and set aside. Subsequently, take 3 pieces of cardamom, 1 inch of cinnamon, 5 pieces of pepper, and 5 pieces of cloves in a mortar and pestle or a small mixer jar and prepare a very fine powder.
Now, add 100 ml of water and 1 litre of milk in a large, deep vessel and place it on medium flame to heat. Stir continuously until the milk comes to a boil. Once the milk begins to boil, lower the flame and add 15 strands of saffron, the previously prepared dry fruit and seed powder, the ground spice powder, and 3 spoons of sugar, mixing well. Let this mixture simmer on low flame for 10 minutes so that the flavour of the dry fruits and spices blends well into the milk and the yellow colour of the saffron deepens. When the milk thickens slightly, turn off the gas.
Pour the prepared masala milk into glass tumblers, serving it either hot or slightly cooled. While serving, garnish with slivers of pistachios and almonds as well as saffron strands. This recipe can prove to be very beneficial for increasing the body's immunity during winter. Masala milk prepared in this manner is not only delicious but also health-promoting, providing the body with necessary nutrients.
